The name is derived from the Neapolitan term mozza- which means “cut” – and refers to the process by which mozzarella is formed by cutting off the curds and shaping it into the now-iconic little balls. According to one legend, mozzarella was discovered when cheese curds accidentally fell into a hot pail of water in Naples.
